Charlie’s Meatballs


2 medium onions- finely chopped
1 ½ t salt
1 ½ t pepper
1 ½ pounds 3G ground beef
¾ C beef stock
5 slices day old bread- finely chopped
½ C chopped mint, parsley, oregano
1 egg beaten
1 clove garlic mashed
All purpose flour and oil for frying


  1. Combine all ingredients together and mix well. Use your hands to get it all well incorporated. Shape into small meatballs.
  2. If frying, roll gently into flour – just enough to lightly coat. Cook in approx. 1 inch of hot oil until brown OR Broil under broiler until golden brown (no flour or oil needed).
